Granola bars are my family’s go to snack! They are so delicious and easy to carry with us, we have them all the time. Our favorite are the chewy kind – but they seem to be soooo sweet. So, I had to figure out how to make my own, so I could control what the ingredients are! Homemade chewy granola bars taste amazing! And, I control what gets added!
Depending on what I find in my pantry, sometimes I use walnuts, almonds, or cashews. If I have almond butter, I will use that instead of peanut butter. Try using peanut butter or butterscotch chips instead of chocolate chips! The possibilities are almost endless. You can also adjust the sugar amounts, if they are too sweet for you and your gang!
These bars have a delicious deep complex flavor. The walnuts are so nutty, the oats are chewy and the honey has a light flavor. Feel free to try different versions!

Homemade Chewy Granola Bars
Wonderfully chewy granola bars with ingredients you can trust, because YOU made it!
Ingredients
- 4 cups Oats
- 1 1/2 cups Chopped Walnuts
- 1 cup Light Brown Sugar
- 1/2 cup Softened Butter
- 1/4 cup Light Corn Syrup
- 1/4 cup Honey
- 1/2 cup Sweetened Coconut Flakes
- 1/4 cup Peanut Butter
- 1 tsp Vanilla
- 3/4 cup Semi-Sweet Chocolate Chips
Instructions

Heat oven to 375 degrees F. Grease a 9x13-inch baking dish and line it with parchment paper.
Toss the oats and walnuts together on a sheet pan and bake for 8 to 10 minutes, stirring occasionally, until light browned. Transfer to a mixing bowl.
Mix all other ingredients into the oats and walnuts. Blend well. Spoon into the baking dish, pressing evenly into the pan with moistened fingers to prevent sticking.
Bake 12 to 15 minutes until lightly browned. Cool for 2 hours on a baking rack and cut into bars.
