It is always so exciting when the Olympics are about to begin. Bringing all the different countries together, all the young athletes, the ceremonies, the outfits, the smiles…. it is so enchanting. I was making some sugar cookies this weekend and decided that they would be great Olympic Sugar Cookies! I was actually making the cookies for a club volleyball tournament, and I think the girls are going to love the Olympic rings on their cookies!
In an effort to make the cookies quick and easy, I made my favorite recipe for roll-out sugar cookies (below), but then just used a small cookie scoop to size the cookies and the bottom of glass to press the cookies flat. After the cookies cooled, I made plain white icing to top them. And then, I added the rings!
The Cookies
The sugar cookie recipe is super easy!
Sugar Cookies
Ingredients
- 1 Cup Butter Room Temperature
- 1 Cup Sugar
- 1 Large Egg
- 1 tsp Vanilla or Almond Extract
- 1 tsp Salt
- 3 Cups Flour
Instructions

Using a stand mixer, cream together the butter and the sugar until well combined and fluffy.
Add in the egg, extract and salt and combine.
Add the flour, one cup at a time until well combined. If the dough is too stiff, add water a little at a time until it is desired texture.
Roll out the dough and cut with cookie cutters. (Or use a cookie scoop and then press flat with a glass)
Bake 5-8 minutes at 350 degrees. Let cool on cookie sheet for 3 minutes before moving to a cooling rack.
For the icing, I wanted it to be thick, so that I could spread it on the cookies and it would not run off. I used two cups of powered sugar. I added 1/2 teaspoon of almond extract and 2 and 1/2 tablespoons of milk. It made the perfect amount for the number of cookies the cookie recipe made. And the thickness was perfect!
The Rings
For the rings, I wanted a perfect circle. I found a great bottle in my kitchen, and I used the top of it to dip in the icing coloring and then to push into the icing on the cookies. Super easy and super cute! You can find any circle shaped item in your kitchen (or other room). Just be sure that it is small enough to fit three across the cookie!
I used one color at a time, and washed the bottle top between each color. Using the Wilton Icing Colors, you need the five colors of the Olympic Rings: Blue, Black, Red, Yellow and Green. Stir the icing colors in their little tubs so that the color is smooth and fluid. Then, dip the bottle top into the desired color and ‘stamp’ it into the cookie icing! Repeat with each color until you are done!
Viola! Olympic Sugar Cookies! Great for the fabulous Olympic Opening Ceremony party you are throwing, or just for enjoying while watching the Olympic games with your family!
