Using a stand mixer, cream together the butter and the sugar until well combined and fluffy.
Add in the egg, extract and salt and combine.
Add the flour, one cup at a time until well combined. If the dough is too stiff, add water a little at a time until it is desired texture.
Roll out the dough and cut with cookie cutters. (Or use a cookie scoop and then press flat with a glass)
Bake 5-8 minutes at 350 degrees. Let cool on cookie sheet for 3 minutes before moving to a cooling rack.
