Who doesn’t love Mexican food? I think it is the only food type that my entire family is happy to eat, without argument! And when the Mexican is home cooked in the slow cooker AND takes less than five minutes to throw together – its a win-win! My easy slow cooker Mexican meal is our family favorite! The flavor is so good, it is so filling and it is healthy!
This recipe is so simple, and can be changed in so many different ways! It never gets old and everyone can dress it up to suit their tastes. And, as an added bonus, it makes excellent leftovers for lunch the next day, or an after school snack with some tortilla chips.
Try Different Options!
My family usually eats this easy slow cooker Mexican meal every other week. Sometimes we use chicken breasts or ground turkey instead of ground beef, or we try different salsa in it. We like white rice in it, but brown rice works just as well, as does quinoa. So many options!
Prepping takes no time at all and the peace of mind knowing that dinner is just about done before the day really gets started is wonderful. I love to make this when our family is going in four different directions: practice, meetings, gym, school activities…. everyone can grab a bowlful when they can – before or after all the frantic activities!
Slow Cooker Mexican Meal
An easy, dump-and-go recipe with rice, beans, meat and salsa. Delicious!
Ingredients
- 1 lb Ground Beef
- 1 can Black Beans drained and rinsed
- 1 can corn
- 1 jar salsa
- 1 cup uncooked rice
- 1 cup water
Instructions

There are two ways to make this, depending on if you are able to add ingredients to your slow cooker during the day, or you need to add all the ingredients at once.
Option 1: Add the ground beef, black beans, corn and salsa. Set the slow cooker to low and cook for about 2 hours. Break up the ground beef so there are no large chunks. Add the rice and water and let the slow cooker continue to cook for the next two hours.
Option 2: Add all ingredients and set the slow cooker to low for four hours. Before serving, break up the ground beef so that there are no large chunks.
Garnish with shredded cheese, sour cream and avocados. Eat with chips or place in taco shells and add lettuce!
