Slow Cooker Mexican Meal

An easy, dump-and-go recipe with rice, beans, meat and salsa. Delicious!

Ingredients

  • 1 lb Ground Beef
  • 1 can Black Beans drained and rinsed
  • 1 can corn
  • 1 jar salsa
  • 1 cup uncooked rice
  • 1 cup water

Instructions

  1. There are two ways to make this, depending on if you are able to add ingredients to your slow cooker during the day, or you need to add all the ingredients at once.

    Option 1:  Add the ground beef, black beans, corn and salsa. Set the slow cooker to low and cook for about 2 hours. Break up the ground beef so there are no large chunks. Add the rice and water and let the slow cooker continue to cook for the next two hours.

    Option 2: Add all ingredients and set the slow cooker to low for four hours. Before serving, break up the ground beef so that there are no large chunks.

    Garnish with shredded cheese, sour cream and avocados. Eat with chips or place in taco shells and add lettuce!
