This dish is one of my family’s favorites. It came from a cookbook that my elementary school put together for a fund raiser. My mom made it for us while we were growing up, and we loved it (thanks Mom)! Now, I make it for my kids and they love it too, and I am so happy to share it with you!

Ingredients
4-6Chicken breastssalt and pepper to your liking
3cBroccolisteamed
1can peach halves
1/2cupdiced onion
1tspminced garlic
1Tbsolive oil
1 1/2Tbspaprika
1/2csour cream
1/2cmayonnaise
3/4cParmesan cheese
Instructions
Heat oven to 350 degrees
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until onion is lightly browned. Add garlic and cook for a few minutes more. Place chicken breasts in the skillet with the onion/garlic mixture and cook for 3 minutes. While the chicken browns on one side, sprinkle half of the paprika on the exposed side of the chicken. After three minutes, flip chicken over to brown on other side for an additional three minutes. Add the remaining paprika to the exposed side of the chicken. Remove chicken from the skillet and place in a 9×13 pan.
Place the steamed broccoli between the chicken breasts in the 9×13 pan. Mix the sour cream, mayonnaise and 1/2 cup of Parmesan cheese together in a bowl. Spread the mixture on top of the chicken breasts in the 9×13 pan. Drain the canned peach halves and place one on top of each chicken breast. Sprinkle entire dish with remaining Parmesan cheese.
Bake in the oven at 350 degrees for 45 minutes or until juices from the chicken run clear. Serve chicken, broccoli and a peach half to each person and enjoy!
