Protein Energy Balls

High Protein snacks that my whole family loves (teens included)

Ingredients

  • 1/2 C Raw Almonds
  • 1 can Chickpeas/Garbonzo Beans Drained and Rinsed
  • 3/4 C Natural Peanut Butter
  • 1/4 C Raw Honey
  • 1/4 C Flaked Coconut
  • 1/2 tsp Vanilla
  • 1/2 C Chocolate Chips

Instructions

  1. Add all ingredients except chocolate chips into a food processor. Pulse until the almonds and chickpeas are ground into a fine meal. 

  2. Scrap food processor sides as needed. Continue pulsing until well mixed. 

  3. Add chocolate chips and pulse quickly just to mix. 

  4. Using a baking/ice cream scoop or a large spoon, scoop about 1/4 cup of mixture out of the processor. Using hands, form into a ball and place onto a parchment lined paper.

  5. Freeze for 15 minutes before serving.  Can keep in the freezer for up to 2 months if sealed tightly.
